Yummy

So last night for book club I made an ice cream peanut butter pie with an Oreo cookie crust. It was DELISH and oh so easy! It will be my desert go to for awhile!

Here is the recipe...

The Crust:

Step 1: Ingredients for Oreo Cookie Crust

  • 1-1/2 cups finely crushed Oreo cookie crumbs (approximately 20-22 Oreos)
  • 3 tablespoons melted butter

Step 2: How to Make an Oreo Cookie Crust

  1. Mix crumbs and butter in a bowl
  2. Use your fingers to press the crust into into a pie plate or springform pan.
  3. If you're baking the filling in the crust, there's no need to bake the crust first. If you're filling it with a cream filling that's just being chilled, you'll want to bake the crust for 10-15 minutes at 350 F before filling.
The Filling:

INGREDIENTS

  • 1 quart chocolate ice cream, softened
  • 1/2 (16 ounce) jar crunchy peanut butter
  • 1 (9 inch) prepared COOLED cookie crust
DIRECTIONS
  1. In a large bowl, mix ice cream and peanut butter together. Pour into pie crust and freeze until ice cream is firm. Serve and enjoy!
YUM.

Book club was awesome too! We all recommend The Guernsey Literary and Potato Peel Pie Society! One of the best endings I've read in a LONG time!
